Mint Oreo Brownies

We went camping the weekend of May 23rd, So we didn't cook last week. Since summer is coming and we will be out of town a lot, I am just counting the weeks we cook. It will definitely end up taking us longer than we originally planned, but I think it will be better than skipping all the weeks we are gone.

We were invited to dinner by our good friends, so we only made a dessert that day. I found a recipe off of another blog actually. I typed in Mint Oreo Brownies and this blog came up. Her stuff looked good, I should look for other recipes on there.   I had mint oreo's and I've always wanted a recipe combing them with my love, brownies. They looked too good to pass up.  So we ventured them with three guests of our own ( one is not pictured-- she fell asleep). Our good friends kids were with us that weekend while their parents were tiling the house they were moving into--sniff sniff. We have had a series of good friends move to other parts of the valley all within the last year or so. We only have a couple close friends left. Anyway...  I don't want to write about it, it makes me sad thinking about it. The kids had a great time cooking together....

MMM, oreos --an Achilles heal of mine. Which is why I don't buy them. It's too difficult to resist dipping and eating a whole row.  (actually I think these might be their knock off--Tuxedos...still good)

On trick I learned that I am embarrased to admit, I've never tried before. The recipe called for lining the pan with foil. Which allowed me to lift them out of the pan even while still very warm and cut them neatly. I have always had a hard time serving brownies without them look mangled--not anymore.



After our guests left we went to eat with our friend's house. They served the yummiest grilled pizza I have ever tasted. It had, pesto, tomatoes, and mozarella cheese and parm. I have never grilled pizza before, but now I don't ever want to make it any other way. The smokey flavor is to die for.  

Since that night, I made my own attempt, I was pleasantly surprised that despite the MANY, and I mean MANY, blunders I made-- it still tasted good. That sunday turned out to be a day of learning new cooking tricks. It's wonderful to learn new things-- even simple ones.


Mint Oreo Brownies

Ingrediants

•1 cup butter
•6 oz. unsweetened chocolate, chopped
•3 cups sugar
•1/2 tsp salt
•2 teaspoons vanilla extract
•4 large eggs, room temperature
•1 2/3 cups all purpose flour
•1/3 cup unsweetened cocoa powder
•3 cups roughly chopped peppermint oreo-type cookies (approx 18)


Directions
1.- Preheat oven to 350F.
2.Line a 9×13-inch baking pan with aluminum foil, and grease lightly.
3.In a medium-large saucepan over low heat, melt together butter and chocolate, stirring occasionally.
4.Whisk in sugar, salt and vanilla, then turn off heat.
5.Whisk in eggs one at a time, waiting until each is fully incorporated before adding the next.
6.Stir in flour and cocoa powder until mixture is uniform.
7.Stir in peppermint oreo cookies and pour batter into prepared pan.
8.Crush 3-4 additional cookies finely and sprinkle on top of batter, if desired.
9.Bake for about 35 minutes, until a toothpick inserted into the center comes out with moist crumbs, but not coated with batter.

10.Cool brownies in pan for about 20 minutes, then lift brownies in the foil out of the pan and place on a wire rack to cool completely before slicing.

These were perfect and chewy little sugar bombs.  I will have to make these when I need to bring them to a social gathering in which I can share the calories, I had a hard time resisting the ones left in my house. Definite thumbs up!

Sizzling Chicken Fajitas, Saucepan Bars

This week we were in the mood for Mexican Food--- mmm mmm! We decided to try another Chicken fajita recipe. They are a classic. This marinade turned out really good. Saucepan bars were another recipe from the Lionhouse Entertaining book. I was a slightly skeptical looking at the measurements, but they turned out to be (as Dora the Explorer would say) Delicioso!!!

After the butter is melted everything is added to the saucepan, hence the name Saucepan Bars


Laney stopped micro managing and let Isabel be the stir girl while she measured everything out.


She dutifully read the recipe, and consulted me when there was confusion

Those two sisters worked together very well. It warmed my heart to watch them.



I am so grateful my children appreciate the nutty flavor.  Unfortunately for my mom, my taste for nuts didn't arrive until after I bore children.  Yes, I was that child who had to have some brownies left nut free, along with my brother Greg. Although, I don't think my brother ever got over it--even as an adult. So everytime I dump nuts into a dessert, I am thankful some genes didn't pass to my offspring. Today, those walnuts made the dessert-- mmm mmm!



The Sugar container needed to be refilled with sugar so of course I had 3 enthusiastic volunteers. Their mouths watering at the thought of being so close to that much sugar. I'll never forget the time I found Laney and Jordan behind the couch sticking glue sticks into the sugar container and licking them. How do they come up with this stuff? Back when we had our green couches, the small couch by the piano was the perfect shield to many devious acts of food sneaking. I have found boxes of cereal, both kinds of sugar, crackers, etc....

Anyway back to the sugar scene. 3 kids fighting over filling the conatiner is a recipe for a spill, and so it was. The funny thing was, I found it fairly comical at the time. Yet Isabel a culprit the the spill was the one mad.  Which I then found even more comical, that she was getting mad at me for laughing! Go figure!





Jordan and JJ made the meat marinade so everything could marinate while we were at church.

Jordan always looks to serious when he cooks. I was teasing him about it.

So he flashed me a smile :)

Sizzling Fajitas!



Smoothie time

Jordan's guts fell out of his fajita, so he ate the tortilla seperate at the end.

After unfolding it he held it up and said "look Batman"
--it really did look like the batman symbol.

Sizzling Fajitas



Ingredients:
•1 - 1 1/2 lbs. boneless, skinless chicken thighs or breasts
•2 medium yellow onions sliced into 1/4 inch strips
•1 large red bell pepper sliced into 1/4 inch strips
•2 medium zucchini, sliced into strips

Marinade

•1/2 cup olive oil
•1 tsp. liquid smoke
•2 tbs apple cider vinegar
•1 tsp. honey
•1/4 cup water
•1 tbs. fresh lime juice
•1/4 tsp. Worcestershire sauce
•3 cloves garlic, minced
•1/2 tsp. oregano leaves
•1 tsp. soy sauce

Toppings

•a bowl of sour cream
•guacamole
•salsa
•2 cups shredded mild cheddar cheese
•fajita size flour tortillas

Slice meat into strips. Pour 2/3 marinade on chicken and 1/3 on sliced veggies. Marinate atleast 2 hours.
Fry until veggies are done and serve in tortilla with desired toppings.

Review:
These were my favorite fajitas ever. The marinade had a wonderful flavor. When they were cooked the housed was filled with a delicious aroma.  We made fresh quacamole ....and I am having withdrawls just writing about them. I really enjoyed the zuccini and I would probably put even more veggies in. This will definitely be in the archives of family favorites. Everyone loved them. I asked everyone if they would give thumbs up and all the kids put both hands high above their heads in unison. Yum Yum!



Saucepan Bars

1/2 cup butter

Melt in medium saucepan.
Remove from heat and add:

1/2 cup sugar
1/2 cup brown sugar
2 tbsp. water
1tsp. vanilla
1 egg

Then add:

1 cup flour
1 1/4 tsp baking powder
1/4 tsp. salt
1 cup choc. chips
1 cup coconut
1/2 cup walnuts chopped

Stir until mixed and pour into greased/floured  9x13
(we used a slightly smaller casserole pan I wouldn't do 9x13, I think it would be to thin)

Bake 20-22 min @ 350

Review:
These were a great hit with the fam! I topped them with icecream, but I think they are best with milk! They are a quick and easy bar recipe that remind me of blondies. Though unlike blondie recipes I have tried these don't come out dry, but moist and chewy. We inhaled the pan. These will be great in a time crunch in the future. Thumbs way up!

Week 31

Sunday May 9, 2010 Mother's Day

 
We are finally back from our little Chef's leave of absence. It took a couple more weeks than I hoped, but everyone was excited to finish out our year! So with 21 more weeks to go, It's time to break out some more recipes....

Starting with... 



Pasta Carbonara, Sunday Chocolate Dessert


This was a lovely Mother's Day. It began with impatient little knocks on my door.  Isabel, couldn't wait for me to get up and come down stairs. She lined Myself, JJ and Jordan up to walk single file down the stairs, like Christmas morning. I came down to a table all set up with a plate of pancakes made up for breakfast.

They even made me a Happy Mother's Day sign.

This was taped to the wall with notes and a necklace she made me that said
"love for Mom" in letter beads.




The best part was I could barely even tell she had just finished cooking. The counter was all cleared off as shown below...


The dirty dishes were placed in the sink. I'm really loving her new found independance in the kitchen.
And Laney put on some Spanish Guitar music in bacground for added ambiance!

Pasta Carbonara

I will be posting this recipe soon, I have temporarily misplaced it since he made it. Which is especially unfortunate because it's the recipe I am supposed to cook for a cooking group I am in. I asked JJ to make it to try it out the first time. It made for an easy choice as a Mother's Day meal since I love pasta and the recipe was readily available. I suppose I have a couple of months to round it up--I am going to get fired from cooking club, I just know it.


Review :
As for the pasta. Since I love pasta so much it's hard for me to not like any dish. As far as rating this on a Carbonara level, I have enjoyed ones that JJ made up more. This was pretty rich. I think it needs less bacon and less cream. Maybe use a lighter cream. JJ and I both agreed the squash was a wonderful addition. That being said it was tastey.  Hopefully I can find the recipe soon so I can try it again with some adjustments, if not , I'm off to the library to make another copy.



Sunday Chocolate Dessert

1 cup flour
1/2 tsp. cocoa
2 tsp. baking powder
2/3 cup sugar

mix together in a bowl then add:

1/2 cup milk
2 tbsp. Butter
1/2 cup walnuts
 1 tsp. vanilla

Pour into 8" baking dish

In another bowl combine

1 tsp. vanilla
3tbsp. cocoa
1/4 tsp. salt
1/2 cup brown sugar

sprinkle over the batter

Pour 1 cup boiling water over the top

Bake @ 350 for 1 hour
Top with ice cream or whipped cream

Review:
This didn't turn out very well.  Mostly because I over baked it. I was in charge of the baking time. Normally I set the timer for less the first time, however, since the cooking time was so long, I didn't think it would matter much. Unfortunately I forgot we put it in a larger pan because we couldn't find out 8" one,  so I should have lowered the cooking time. It was pretty crunchy. JJ said it was perfect. We have an ongoing debate about the correct level of completeness in baking times. I prefer baked goods to be slightly underdone, so they are moist and chewy. He prefers things crunchy. So, when I cry out in dismay that I have burnt...   JJ always calmly walks by the pan and says, no, they are perfect. I know there is no hope when he admits they are burned. That being said, I truly did burn the dessert. (I know my foody dessert friends would have admitted it), but alas any warm chocolate sweetness topped with icecream is asking to be gobbled up. Which we did. I don't anticipate making this again in the future. I feel there are more worthy places to find empty calories.

Thank you guys for the lovely Mother's Day,  One I will never forget!

I forgot that I wanted to write a couple of things that laney wrote me.  She cut out 20 hearts out and wrote sweet little notes on them, These are a few of my favorites...
