Pesto Calzone, Lemon Pound Cake
With the discovery of our Ninja blender. We decided to put it to the test with a traditional favorite... Pesto. MMMmm... how we love pesto, it's Isabel's favorite dinner. Although... after week 4's Courdon Blue it has gotten bumped to number 2. It is a family favorite, but traditionally a bit of a pain to make. Usually I make JJ do it because I hate trying to get the blender to grind up the basil. I think it is because I can't bear to add as much oil as he does to make it work. It's better to be unaware-- I enjoy the meal much more that way. However, our little Ninja blender we tried out last week was a dream. So I was anxious to truly put it to the test! I love that it comes with a smaller blender container to use for littler jobs. Pesto has gotten even easier!

Sarah and her brother Andrew come over frequently to play at our house. We enjoy having kids in the neighborhood. They come and go as they please. If it's a bad time I send them home and tell them to come back later. We have had many fond memories with them through the last few years and hopefully more to come.

I love the Bosch mixer for making bread. I hate kneading the dough by hand.

Lemon Bread
This was an especially big hit since we made it before dinner. Everyone inhaled the mini loaves out of the oven as they waited for dinner to cook. They tasted out more like cake than bread. But it is very moist and sweet which is the way I like it!

1 Lemon Cake Mix
1 cup cold water
3 oz. Small Box Lemon Pudding
1/2 Cup Oil
4 eggs
Mix and Bake @ 350 15-20 min. or until cooked through
Pesto Calzone
This got enthusiastic thumbs up. JJ wasn't totally sold on the Broccoli, but I liked it and it added some veggies to the meal. This was a great meal pleaser for Isabel and Laney since Isabel's favorite meal is pesto and Laney's is Calzone.
Pesto Calzone
Pizza Dough (I used my favorite calzone dough recipe)
1 1/3 cups mozzerella cheese
Pesto sauce ( I made our favorite pesto sauce)
Cooked broccoli (I used 1 pkge. broccoli from fresh and easy)
1 cup shredded chicken
Olive oil
Directions
Make Dough and we roll it out as thin as possible and spread half of pesto sauce. Add cheese, broccoli and shredded chicken. Fold over and press edges with a fork. Brush the edges with olive oil and garlic. Bake 400 for 12 -15 min.
Calzone Dough
1 Tbsp. Sugar
1 cup water
1 envelope yeast ( 1 3/4 tsp.)
3 1/4 cup flour
1 tsp. salt
1/4 cup olive oil
Directions
add sugar, yeast, oil, and very warm water. Let sit 5 min. to bubble. Add rest of ingrediants, and
yeast mixture into a bowl or mixer. Knead 10 min. in mixer or by hand. Let rest a few minutes. Divide in half and roll out on lightly floured surface.
Pesto
I have long forgotten the exact measurements but it is the combination of
Basil (about 1/2 of one big box of basil from fresh and easy)
Olive oil
1/2 cup grated parmesean
1 boiled potato
garlic cloves
pine nuts
Blend ingrediants in a blender.
